Hoshino Sencha Zairai

The tea leaves for this Sencha were picked in the famous village of Hoshino in Yame. Hoshino means translated "star field". A fitting name as in this remote mountain valley the stars shine especially bright. Sencha from mountain valleys such as Yame are a rarity because, due to the lower temperatures, the harvest starts about a month later than in deeper and shallower growing areas. The lower temperatures, however, lead to more intense and complex aromas.

For this tea were Zairai tea leaves used. Zairai is not a cultivar but a tea bush that has been grown from seed. That's why Zairai tea bushes are extremely different from region to region. Mostly, Zairai tea bushes are related to the cultivars prevalent in the area, but depending on the weather, even wild genes can find their way into the tea garden. This Zairai Sencha trumps with a very balanced and sweet aroma.
