Wegen seiner schlicht gehaltenen Funktionalität ist der Gaiwan bei Teetrinkern das Universalwerkzeug bei der Zubereitung von Tee. Lu Yu schrieb einst, dass diese spezielle Schüsseln gross genug sein mussten um die Teeutensilien unterzubringen, aber klein genug um sie bequem in den Händen halten zu können. Der Begriff für dieses vielseitige Gerät war [[Chawan]]. Während der Ming-Dynastie änderte sich die Form der Zubereitung: Statt in pulverisierter Form wurden Teeblätter überbrüht und der Tee anschliessend abgegossen. So wurde der Chawan mit einem Deckel versehen um die losen Teeblätter zurück zu halten. Diese Neuerung bei der Teezubereitung führte schlussendlich zur Form des Gaiwan.</ins></div></td></tr> </table>
